The one-piece FLGR's aren't nearly so troublesome. With one of them you just reassemble it much like a standard 1911.
There is nothing good about the two-piece guide rods.
The best solution is to remove the pits entirely. Any other approach will be a half-measure at best and will be something you probably won't be satisfied with in the long run.
Most competent gunsmiths should be able to take the metal down just enough to get under the pits. I have done this...
Another vote for the XD. I have two now, a Tactical and a Service model. I use the Tactical for competition and it's been completely reliable. I shoot both lead and FMJ reloads, and the XD takes them both in stride. I have about 2500 rounds through it so far.

I voted SIG as having the best quality (by a hair) but the SIGs aren't my first choice. I prefer the Berettas. The SIGs have a ridiculously heavy trigger and I'm not a fan of their unique sights. I had an HK USP years ago and won't consider another one except perhaps the P2000.

I use Royco's CLP by default. This is the current mil-surp stuff, with no Teflon in it. It seems to be at least a good a solvent as Hoppe's, but won't do much for copper fouling. Prior to Royco I used BreakFree CLP with good results.

Sticking it through like a bowtie will work, but a better way seems to be inserting one corner of the patch through the slot, and winding the rest of the patch around the jag. This way no metal should be able to contact the bore.
I have some of those brass caliber specific jags with the point on the end.
I absolutely hate them. They are way too tight, even with the patch trimmed way down to the smallest possible size. And half the time the patch falls off the jag before I even enter the bore.
