They're fantastic rifles - rifle gas on a 18" is insanely soft-shooting. If I didn't like building them so much, I'd very likely just buy one and call it good.

If I had to pick a gun solely for training purposes, a Ruger MarkIV, Browning Buckmark or Beretta Neos with a 4-7" barrel would be my pick. Great sights, easy ergos (including slim grips for smaller people) and pretty much no recoil make them all good teaching handguns.
Recently picked up a new CZ P-09 Urban Grey (with the suppressor night sights, threaded barrel and 21-round mag) and built a P80 G17.
On top of that, I converted a 80's vintage briefcase to transport them to the range in a discreet manner:
Primary Arms has a good 1-6x ACSS reticle scope here. Alternately, here's a 3x prism. Both are under $300. They also have a 1-4x for way less cash. I have two PA optics and wouldn't hesitate to recommend them.
Interesting thought exercise. My own solution to that problem would probably just be a 10.5" AR pistol/SBR with a good 1-6x, folding BUIS and a two-point sling. Mags would all be 20-rounders just because 30's are a pain in the butt when shooting from prone.
I get a lot of interest in my Rhino 60DS (I freely admit that its weird appearance was a not-insignificant part of why I bought one) and am always willing to let someone run a cylinder or two of whatever I'm shooting that day if I haven't already burned all of it. Nobody likes the DA trigger...
I just fire three shots holding on center to establish a group at 50 yards after boresighting. At that point, it's just math (inches away from center doubled, plus/minus any bullet rise/drop for your intended zero and then compensated for based on the MOA click value of your scope) to figure...
