Both are solid performers. Either would be fine, and if there was any advantage to one or the other, it certainly would not be "far and away".
The PDX1 is very similar to the RangerT rounds. Those are some of the best SD rounds out there.

I love my 10mm. Unfortunately, there are no good SD loads for it. None of the excellent performing modern JHPs are designed to perform at those velocities. No HST, no Gold Dot (that works well at anything above .40S&W velocities), no Ranger.

You need a light to ID an intruder in low light. As much as I love my handhelds, they handicap you in a fight.
Weapon lights allow you to shoot two handed and still have light on the target. Or use your other hand for something useful.
Over lubrication will not cause the problem you describe.
Weak grip is my prime suspect. Grip it firmly and get the web of your hand as high as you can on the backstrap. Also, being a used gun, I'd get some new mag and recoil springs in it ASAP
I would go with the Covert. Added barrel length won't hurt comfort or concealability. But more velocity and sight radius and especially less muzzle flash are all plusses in a fighting gun, even if they are not all that noticable.
One should always have two 1911s. One to look at often and shoot occasionally and one workhorse to tinker with and really learn the platform.

Not contradicting you here, just thinking out loud:
I would imagine the reason for the spread has little to do with the rifling itself, but rather the thin, low ballistic coefficient bullets exiting the muzzle in each other's wake.
Much as I like how the CZ's feel in hand, that's where the love fest stops for me. How you achieved rapid double taps with the long, vague reset on a CZ75 is beyond me.
