Help with Knife ID

I inherited these from my great Uncle quite a number of years ago. I am assuming they are fairly old, but not ancient.

Never really paid much attention as they're fairly well worn and used. He was astoundingly cheap, so I'm also pretty certain they're worthless. Mainly just curious.

Can someone help me ID them? I know jack squat about knives. He did a lot of fishing so I'm assuming they are related to fishing in some way?

Any help is appreciated.

I'll tell you this about the German knife, it is significantly harder steel than the first one and is a bear to try to sharpen.
 
The leather handle is almost certainly a 1095 carbon steel and the stag is almost certainly a 440C (which would be harder to sharpen).

The pitting on the tang has obliterated the name we'd expect to see there.

Hopefully Yoda (RC) will be along soon to tell us what the leather handle is.
 
Once I realized that it could have been sharpened down to almost fillet knife profile it sure looks like an EGW.

Or 440B. Very cool knives to bad someone went ham on them with a grinder and brillo pad or sand paper. Either way I would wear'em on my hip from time to time. Both still have plenty of life left in them. Congrats on the knives!
 
What is an EGW HSO? Butt cap is an exact match, this appears to be the camping model.

Any idea when they were made?
 
Thanks a bunch RC! Your post clearly explains the difference in sharpening the two blades with my Lansky.
 
The german knife i a very common Solingen Type .... pre-war and 50`s i`d say.
