I've had several Sig's, a P226 and now a P320 45acp/FS. I've always had problems with the slide not locking back on the last round. I know what the problem is, it's me. No matter how hard I try, I can't seem to keep my hand away from the slide lock (I have large hands).

I thought I saw somewhere where there was a 3rd party slide stop lever available for SIgs. ANyone know about this?
 
Nope, but you might try a 224 or Legion slide stop for your 226. It makes it basically useless as a slide release but you probably won't prevent it from locking open.

Also watch this if you haven't.

 
Using that grip, actually thumb placement, taught by Bruce solved all my problems with accidentally activating the slide lock lever. A popular "fix" used to be grinding it down until all you had was a nub with which you could only lock back the slide...which isn't a problem if you're not using it as a slide release anyway
