Mine is my Steyr M95, which was arsenal rebuilt in 1920 (so it's actually older than that but the original date has been obscured). It's a handy little rifle with fairly stout recoil, but not as terrible as some have made it out to be...ammo's rather hard to find sometimes though.
Oldest is my US Govt Model 1917 Eddystone made in 1917, then my Mossberg Model 83 .410 bolt action made in '36-'38 somewhere.
The Mossberg was my grandfather's first firearm.
It's a 1870/87/15 Italian Vetterli. Over 700,000 were converted from 10.4x47R caliber in the dark days of WW1 for rear troops and as trainers.
It started it's life in 1875.
Geez, good question.
I would say my oldest rifle is my 1937 Brazilian contract VZ24 7mm bolt rifle.
My Mosins are WWll dated and my Garands have all been rebuilt post war.
eta; I have an old Remington Model 12 pump .22 but it is in pieces and going to be rebuilt so it doesn't count for anything here.
Close race for a few but the oldest one manufactured is my Spanish 1897 Remington Rolling Block in '7mm Spanish' (7x57).
Then the 1898 Krag, 1903 Martini .303,1904 made 1891 Argie Engineer's Carbine.. ect. ect.
A U.S. M1871 rolling block .50-70, made in 1872. Have owned and shot older breechloaders and muzzleloaders - the oldest was either an original Edwin Wesson .38 ML target rifle made before 1850 (the year Wesson died), or an American combination percussion rifle-shotgun also of about that age.

1903 dated M96 swede mauser, I reload for it so it get a lot of action, finally had to mount a scope on it so I could see the target. I use one of those mounts that replaced the rear sight so I can return it to its original condition with out any problems
