High carbon blades sharpen easier and better because of the uniformity the carbon molecules encourage in the metal.

I should really get a set and start working on my sharpening. I can't be leaving everything with factory edges.
 
Homogeneity is desirable in any metal, but isn't the reason a carbon steel blade sharpens easily.
