I agree with this. 9mm has been around long enough that there are "standard" loads using "standard" powders. Start there. Unless you have some undisclosed need for an uber accurate load you will find something to get you started. Use known "good" loads to see if it works for your circumstance...
I have been wearing progressives for a very long time and have no difficulty with iron sights. You quickly adapt and learn what part of the lens to use, just like learning to see printed matter.
A 2 3/4" shell will be 1/4" longer than the 2 1/2" chamber when it is fired. This will cause a constriction in the forcing cone resulting in an increase in pressure.
The loaded shell will fit the chamber, the problem is the fired shell will not. How much that will raise pressure, I don't know. Modern 2 3/4" loads could be well in excess of the service pressure your gun was designed for.
Hard question to answer, so much depends upon condition. As noted above, cracked stocks are a known issue with these guns.

If I'm reading this correctly both guns are missing parts and the one for sure needs significant repair to be safe. Sounds like they are both parts guns at best.
Hodgdon shows several powders including AA #9, #7, and #5 among many others. I've also used 8gr. of Unique and 18gr. of 2400 (reduce and work up to these) in the past.
