I have an awesome set of Elk grips for one of my 1911's. I have large hands, but even so, thezse grips are just too thick. Is it possible to have them "thinned" a bit and still have the edges and holes match?

Even in an unramped barrel, you can shoot a pretty stout load. Just use good quality brass and keep an eye out for pressure signs.
