I've done it, I wouldn't do it again unless I really had to. I trimmed the brass way down as '06 is much longer than 8mm. Trim brass, resize, trim again. As far as conversions go, it's pretty simple, but you really have to trim a lot off the '06 to get it down to a usable length.

Don't get me wrong, I'm a real winchester fan, my first rifle was a 94AE in 30-30 and my first shotgun a 12ga Win 1200, but for your purpose I'd go with a Marlin. The model 94 in 357 will have the same lever throw as the 30-30, and the Marlin has a shorter throw, making for quicker reloads.
