    I have to agree, a smoked Canadian goose is to die for. Younger geese, I'll roast stuffed with sauerkraut and sausage. Don't knock it until you try it, it helps keep them tender and moist, and the kraut is mild and a perfect side dish to cut the richness of the goose.
