When I rebuilt my bench, I glued/screwed an old piece of white countertop to it. Prior to this, it was cheap plywood, which caught powder, carbon, etc. and sucked. So I got some of those paper thin cutting boards that come 3/$3 or whatever. One other option I considered is those 1' square linoleum/vinyl floor tiles. You can pick your color, and they aren't dent proof, but you can stick a new one on every 1 or 5 years if you're really having that big of issue. My press is mounted to a cantilevered 2x6, about 6" from the front of the bench, so mounting through the countertop isn't an issue for me.
Recently, when considering building a bench for laundry folding, I think I will go the tile route, but countertop is cheap, too, and you can get the kind with a backsplash built in if you blow the $40 for a new piece. Still haven't decided.
