No, I'm not kidding. I really want some good groundhog recipes. If anyone has a good one--that they've actually eaten from--I'd like to hear about it.
 
What did Punxsutawney Phil ever do to you.:D

I know native Americans used to eat them and I have a friend who eats just about everything else from Racoon's to opossum's but thats one I would have no idea where to even begin to find a recipe for.

Then again marinate anything long enough and tenderize it and drown it in BBQ sauce it and anything could be eaten I suppose.;)

One Model 70
One 165 grainer, in '06

Insert 165 grainer into Model 70, and using the sitting position, generously apply the one 165 grainer.

Can't eat the damn thing, but it does result in making its own sauce. :D

Variations:
Model 94 and 30-30, Model 29 with .44 mag, Kel-Tec P-11 with 124 gr standard pressure JHP, Gov't model of 1911 with 200gr Flying Ashtray, SX1 with 2 3/4" Brenneke and H&R Youth 20 ga with 2 3/4" Brennke slug.

Property guests gotta eat too, and these are great guests as they clean up after themselves after meals.

Guests seems to like my recipe, Groundhogs keep showing for dinner, and I just prepare the darn things.

I have heard people claim that they had brothers, etc. who ate them but I have never talked to anyone who has actually eaten one. I did have Bar-B-Q raccoon once and it wasn't bad so slow cooker in Bar-B-Q sauce might work. Let us know how it tastes.:D
 
I stopped to visit an old aquantance once and there was an awful smell coming from the camp stove and big pot on his work bench. He was cooking ground hog. I didn't eat any but he said he boils them to render the fat, then slow cooks them until the meat falls off the bone. He cooks it in the shop because his wife won't let him cook it in the house. He swears he eats it but I think he feeds it to his dogs.
 
I have eaten groundhog several times when I was a teenager. You can basically fix them using any recipe for deer. Most of the ones I ate were baked in the oven. A crock pot would be a good way to fix them. Groundhogs are vegetarians and they are actually pretty good. The only bad part is they stink while you are cleaning them. I have also eaten raccoon. They are greasy, but good. When I was a boy, my best friends mother used to fix them all the time. She also baked raccoon which is very greasy but good. She made a homemade sandwich spread that was absolutely great, and we would cut pieces off the raccoon and make sandwiches with it. They disappeared fast. I knew a guy that would kill ground hogs and grind them up, and the way he fixed the meat, you couldn't tell it from ham salad. He fed it to his family all the time, and they didn't have a clue what they were eating.

My wife once ate groundhog. She says it was like eating rubber bands.

Myself, if I weren't a vegetarian, I wouldn't eat anything with buck teeth.
 
groundhog recipe

My grandma used to bake them in an oven in gravy and sweet potatoes. She would only use the young ones and would discard the older ones. They have a slight musky smell when skinning. They actually were not too bad cooked this way - at least for a starving young farm boy.
 
i eat ground hog every chance i get, which is not often enough to suit me. Grew up eating them in WV: Unfortunately there are none in western OK.

Cut the groundhog into pieces. Soak in a mild salt solution over night-a tablespoon ful of salt in enough water to cover the meat. Soaking it in a fridge is a good idea. Parboil the groundhog meat. Dry off the meat, flour lightly and fry in a pan.

Or

Cook the meat in water with carrots potatoes celery onions, etc.

Thats how my cousin makes them, I haven't had any yet, but he sure likes them.
 
Eating groundhog

My dad told me that they used to eat groundhogs during the depression. He told me that his mother baked them with sweet potatoes. I never knew the exact details for baking them or preparing them for baking. I can't ask because my grandmother died in 1974 and my dad died in 2003. For some reason,no one thought to pass this information along.
 
Groundhog Stew

Take one groundhog, after apppropriate cleaning,let set in a salt solution at least one day, cut into stew sized pieces-1/2 inches or so. Brown the meat in a frying pan. put into a crock pot along with a package of brown gravy mix and one package of onion gravy mix throw in some mixed veggies and sliced onion, medium, cook as if you are cooking a stew.
I suggest using groundhog harvested late in the spring or in the summer. Those taken early in the year have a rather strong taste.
I use the frozen mixed vegetables available at most food stores. Of course if you gag at an occasional hair in the stew sorry 'bout that.
