Try this one on for size. It came to me in a weary state, just got homefrom work and i was decompressing. It occured to me that hunting and the dressing/butchering involved there after might bre pretty close to kosher. Still haven't read much but I read this=http://www.jewfaq.org/kashrut.htm.

Specificly the "deep stroke accross the throat...unconscious within 2 seconds part, a rifle shot should be instantanious. Guts out, ciatic nerve/vein out, blood out. Some hang ups with rabbits, pigs, and butchering within 72 ours.

What's the addvantage to aging meat. I know you all probably hang your deer or elk but do hang a rabbit? How long for different animals? I'll bet you game animal are considered organic too. Kind of a fun spin on things. Anyway, this was a random spark in my brain last night. Thought I'd throw it out there.
 
You have some interesting questions there Hoshua1. While I'm not Jewish and someone else may answer better, I believe that how the meat is handeled is only 1/2 of being kosher. I think it needs to be whitnessed/blessed by a rabbi. Not sure how pickles fit into the eqn. but like I said, I'm not jewish. As for aging small game/birds, I have never tried it, I'm more of an "out of the fur into the fire" type of guy though.

You got it! Me too. Read the article. I'm not jewish either but its good info. The rabbi has nothing to do with it first hand as it turns out. All I'm saying is that hunting is as old as earth. Well almost at least. Religious rules as old as these originate in life practices which I'm sure involved many ways of harvesting food. Hunting in its essence is pure and so I think it has a lot in common with the kosher laws.
