I have a Winchester 1894 with a crescent stock. I like shooting it at the range but it is hard on my shoulder after about 15 rounds. Does anyone know of a tasteful recoil pad or cuff that fits this shape stock?
Check Cabelas for a leather lace-up recoil pads. It looks close enough to period, so it doesn't mess too much with the looks of the gun, and it works on the crescent stocks.
I have a better suggestion.
Purchase a replacement stock and install a recoil pad.
Keep the original stock with the crescent buttplate as original.
Cutting the original stock will detract an appreciable amount from the value of the rifle.

Great American Gunstocks should have an even nicer stock and can install a recoil pad to whatever length of pull you desire. http://www.gunstocks.com
Onmilo: The lace-up recoil pad doesn't require any modification to the original stock. It slips on, then the laces are used to secure it. Its also a lot cheaper than buying a new stock.

One of the issues I have seen with adding leather to wood is the great unknown of the tanning process used for the leather.
Left on a stock long enough the leather reacts with the wood finish and can suck the oil out of the stock or worse yet, it can severly discolor the wood.
Not good for an original wood stock and again, something that will seriously devalue the worth of the rifle should the OP ever decide to sell it.
It is indeed more expensive to buy a shooting stock but this can save hundreds of dollars if the rifle is ever sold.
If the rifle is ever sold, the shooting stock can be included in the deal as an enticement and when dealing with older original firearms, enticements such as these often add more value to the sale than the retail cost of the purchase.
There is a rubber Slip on recoil pad that works very well
Also ware a shotgun shooting vest at the range or two or three layers of shirt and jackit when shooting.
