The lever on the left side by the front sight releases the gas tube assembly when you turn it up. After you remove the gas tube assembly you can turn the lever up farther which will release the piston and spring. If I remember correctly the piston wil launch so hold something in front of it. Mark
You can just keep your finger there. The gas piston extension does not come out with any real force. You just don't want the rod and spring to go flying across the room.
I can't vouch for AKs (don't have one, but wish I did), but on the SKS, nothing appears likely to wear out. The only exception would be the gas valve on the Yugo 59/66, but if you keep from shooting corrosive ammo, that won't be a problem either.
