easy way to clean them: hang them by backlegs back toward you. cut at the base of the tail and pull the hide toward the head using the tail as leverage. cut off head and feet. switch ends with it belly toward you and grab the skin there and pull it off the back legs. gut. easy as an be with a young squirrel.
 
To cook squirl I quarter it,the back doesnt have much meat so I only cook thr legs. Just batter them with flour salt pepper and other spices that you might like. Then fry them in a skillet. They are good just like that or after you fry them you can empty the oil from skillet, put them back in and add a can of cream of mushroom soup and a little water and simmer at a low heat for about a half hour .
 
cookin squirrels

i am a squirrel fanatic and hunt them almost to the exclusion of all else. my wife wont eat them but she cooks 'em good.

Squirrel Hot Wings:

pre-heat oven to about 425.
take and mix butter and tabasco sause in a small pan , mix to taste.
take an appropriate size glass cassarole pan and spray Pam all over inside
soak the quartered squirrel parts in the sauce mix and then lay them in the pan.
slide it in the oven and cook for approximately 40 minutes basting occasionally.
serve with beer .
 
Franks hot sauce works great for wings recipes too. There aren't enough in my area, where I can legally harvest them and make it worth my while. There are many of them in the parks in the cities, but I can't touch them there. Out in the coast range, I don't see enough of them to make a meal so I don't bother.

Plus, in Oregon, there's a season as to when you can harvest them.
