I've got an old leather handled Blackjack 1-5 copy of the Randall that's good enough for me. Gets as sharp as i can get it and stays that way for a long time. It's got some character to it.
There's something about a hand forged knife that conveys the makers blood, sweat and ergonomic sense. You go to a show and pick the one up and you are still standing at the table five or ten minutes later, and haven't put it down, just switch hands to dig out your wallet - then you'll understand.
