Like ballistic gel, water jugs can serve as a useful, uniform medium for comparing the performance of different projectiles. We just have to resist the temptation to extrapolate from a bullet's performance in water jugs to its performance in wildlife (or a human). So long as we don't make the mistake of concluding that because bullet "A" went through four water jugs and bullet "B" went through seven, bullet "B" will perform better on deer, the results of your tests are perfectly valid.
