Looks good ks5shooter and armeredfarmer. I like to soak over night in Italian dressing and use a rub.

Sorry on pics, today I made a few small stakes I cut from the hindcorter. Just some spg a drop of oil and butter and a few garlic cloves. Had to share some with the cat, ran out off cat food last night.

I've had my eye on the one green mountain pellet grill, it's portable and works off ac/dc. There low $300 to. Good temp range 150° to about 550°
 
On one else I my home likes any game meat, I can't even cook it when there home. My dad eats about anything like me. Hope to get out for some crappie the next few weeks before trout.

I to think this is a great thread as well, hope for a turkey this season maybe 2 if I am very lucky. Same like the deer soak the breast in Italian dressing and use some spg or preferred seasoning and cook on the grill or smoker. Best Turkey I've ever had.
 
I don't have pictures, but picture cubed deer steaks... tenderloin, backstrap, whatever... it's all different degrees of good... battered in whole wheat flour (hard red or soft white) with garlic powder and pepper (black or cayenne), fried, and the excess flour becomes gravy. Add any variation of mashed potatoes and greens and it's a plateful.

Maybe put those same steaks in the oven with your favorite bbq sauce.

Deer steak fajitas... I've done that too.
 
Yep. I use a small cast iron skillet to pound them to about 1/4" thick (I cut the steak about 1/2" thick to start). Buttermilk drench and seasoned flour dredge twice. The cook about 2 minutes per side. Tender and moist as can be.

Pounding them thinner, for me, is usually an eliminated step, the meat being cubed, but it sounds like my understanding of schnitzel.
 
I’ve never seen game for sale at Winn Dixie. Walmart or Publix. :(
My club in R.I. gets road kill deer, whats usable is processed and frozen for winter game dinners. Unfortunately I’m always in Florida during those months. Game dinners were quite popular in the Ocean State Until the law makers decided if tickets were sold to the public all meats had to be USDA inspected. So now it’s pretty much private clubs with word of mouth and donations accepted type of thing.
 
So far no posts on Liver. IMO one of the best parts.
In my Maine hunting days Deer liver went from carcass to plate at the hunting camp on the same day it was harvested. Smothered in onions crisp bacon and brown gravy no finer meal could be had. :)
