This is simpler: If the gun is Double Action it ejects all at once. If Single Action, then only one at a time. The sole exemption is the NAA mini revolver where one must remove the cylinder completely to eject the spent cartridges, and that is a SA gun.
IMHO, a lock blade pocket knife can be explained away as just about anything. I have a CRKT assisted open knife (not a full on auto or switch blade) that locks with a liner type lock and is as rigid open as a fixed blade, razor sharp spear point.

As an instructor my guess is that she will probably LIKE the Hi-Power best but that's NOT the gun I'd recommend for her. Have you thought of a Sig with the DAK trigger or maybe an H&K P30 with the LEM trigger?
