Am I crimping to much?

After bullet is seated its at about .380 or .379 after crimp it's at .376 or .377.

I notice a little of the brass flakes off.

you really dont need much of a crimp on 9mm if you are flaking off pieces of brass that might be way too much. also what gun are you loading for? I usually give the auto cases i load for a nice taper crimp and test it in the barrel of my gun. Heavy crimps are usually for heavy recoil magnum rounds and tubular magazine rifles. Im sure others will weigh in as there are alot of knowledgeable folks on here.
 
First question I would have to ask is?

What caliber are you crimping?
If 9mm?

.376" is 'factory' with jacketed bullets.

Flaking indicates sharp case mouths.
You need to chamfer & de-bur before loading them the first time to prevent that.

Not sure what your crimping with? LFCD? Anyhow that does not sound like an over crimp. I run plated and mine are right @ .376. you should be good on diameter.
