Flintlocks used to be converted to percussion on a regular basis. Muskets and rifles both got the percussion treatment and ever since, collectors and restorers have been reconverting them back to flint. So, it is possible.
What model do you have? Is it a drum and nipple arrangement? If so, get the appropriate flintlock and a touch hole liner. Spin out the drum, install the liner and install the lock. That is the simplest conversion. There are others ways to do it but they are a bit more complicated.
As to carving the stock... not sure I understand. You may need to inlet the new flintlock but nothing drastic, if thats what you mean. Or are you wnating to add rococco carvings to the stock?
