favorite game meat

This thread deserves to live. Also, yes, it's making me hungry.

Aoudad (kind of african rock goat thing). It's an imported exotic, but pretty common in the TX hill country. Best game i've eaten, kind of a peppery taste to it that goes away the longer it's cooked. (don't overcook the meat! it doesn't take much to get it up to temp... remember, all mammals start out over 90 degrees anyway)

Weirdest: Duck heart - just tried it on Saturday - really good, I had no idea what I've been throwing out all of these years.

Favorite: Moose, bison, Sitka blacktails.
Fish: Halibut, followed by red salmon.
Weirdest: Bowhead whale. Prefer beluga.

Favorite: Pheasant – and I really like hunting them so bonus

Weirdest I’ve tried is probably rattlesnake. I’ve had the opportunity to try head cheese and Rocky Mountain Oysters but passed.
