Both rounds fill the same niche, and recoil is comparable between the two. I would strongly advise against the Sendero given the type of hunting you will be doing.
Both rounds offer nearly identical field performance, as well as offer a wide variety of bullets that would be suitable for moose and other large game.
I would prefer a Sako or Tikka in either caliber.

Both of those are the cheapest line of USABLE ammo for moose. There were some cheaper options but too light of grain or FMJ

As far as "knock down" They each have more than enough power at yardages up to 200 for moose. Dead right there only happens on Moose with a Central Nervous System impact such as spine or brain. Very rarely will the go "bang flop" from anything else so that is not really much of a concern.

ANY calibre will fragment at close range if not properly constructed. The faster the cartridge, the tougher the bullet needs to be.

If using the 180gr in 30.06 vs. the 160gr in 7mm Rem Mag, with the same bullet types, inside of 200 yards the 7mm MIGHT get a little more penetration but not really enough to care.

In closing, the venerable old 30.06 has been around for well over 100 years now for a reason. It is a dependable cartridge and has taken many large moose. In my lowly opinion, you would be better served in both cost of ammo as well as less recoil with the 30.06 and as long as you put the bullet where it is supposed to go, you will have no trouble dropping a nice moose.

I can speak from experience on this as I have Savage's version of that rifle. After spending a day in the woods with something like that you will soon realize it is not meant for that type of hunting.

Remington has not been doing so well lately as their quality control is hit and miss, I'll probably get flamed for that. Stay with your standard bolt action sporter in whatever cartridge you end up choosing, you will be well outfitted either way.
 
I'm not saying sendero cause I have one, I'm saying it because I want one, a feller at our range has one that shoots like .4 MOA and rocks, I'm not weight sensitive though I guess.
In my book Heavy>Too light.
but they're right, It isn't ideal for that type of hunting.
