"in the white" chambered for a .308. The Styer action is very smooth. I'm
wanting to clean it up somewhat. Maybe just polishing it up. Any ideas?

I'd take it easy with stout .308 loads in it. Maybe Cerrosafe cast the chamber and see where you're at, or have a smith look at it.
Finish wise, I've had good luck with Brownell's Oxpho-Blue
 
"N.A.T.O. Modelo 1912-62" is stamped on the large ring on the receiver. ".308" is stamped on the barrel, which looks like a new barrel I've shot about 200 rounds thru it with no problems, so I know it is safe. (thanks for the concern, btw.) I thought about a rotary Dremmel and a bucket of jewelers rouge.
 
Don't get too happy with a dremel !!! Polishing a flat surface with a round polish wheel can leave the metal looking like the tide coming in. Especially a small round wheel spinning at 20,000 RPM. If you're going to try this, practice on scrap metal first.
 
I had 4 Chilean Styer 1912 7.62x51 Mausers before and still have one. Great shooters. Large ring mausers and many were rebarrelled with M1903 2 groove barrels in the 60s.

Those are small ring 1895 Chilean mausers.

HankC is correct. The only downside was that the machining the 1903 barrels to the Mauser profile often left the exterior of the barrel a bit rough--sometimes the shoulder machining of the barrel is not that great either.
