Hi everyone,
I was wondering if anyone could give me some tips on mounting both a scope and iron sights on bolt action rifles (particularly steyr pro hunter),
cheers.

Mount the scope first, since the position of the scope objective will help you decide on rear open sight placement. If you want an open rear and the scope is to be mounted low, get a folding rear leaf to keep it out of the way. Be aware that with a really low mounted scope, the front sight may intrude into the field of view (blurred at the bottom) in some magnification settings.

If you are considering a peep rear, and given the lack of mounting space behind the rear scope base on the Steyr, I would suggest looking into one of the many detachable rear sights that mount on the scope base. You'd probably need to remove the scope to use irons anyway. There are lots of options that will fit a Pic/Weaver base, but most will require a rather tallish front sight, so choose the front sight last.

Alternatively, you might consider the non-traditional path I took with my Kimber 84 Hunter: instead of backup iron sights, I have a small electronic red dot that fits onto the front base with a QD mount. The red dot is pocket-sized, cheap, reliable and old guy eyesight friendly.

High/ see through rings would be the easiest, they just make the gun that much taller.
Canted irons could be an option depending on how you intend to use them, generally canted would be for quick shots in close or when your optic breaks, but makes for a gumby hold so not comfortable for long range/ precision IMO.

The traditional answer is a side mount. This mount is like a Jaeger or G&H. This allows the scope to align with the bore but with enough room to be able to use aperture signs and/or a barrel sight. Got a 99 with a tang sight, barrel sight and a scope on old time Redfield rings and base. Original owner did not have much faith in scopes it seems. This type of mount is almost extinct and never were cheap. Weaver and Williams made side mounts along with some others that were less expensive. All are history now. Those pot metal see-thru's are an abomination.
