I've never seen a good peep sight replaced by something more "pedestrian" (usually, it's the other way around). If it were me, I'd replace Grandpa's irons with an authentic peep and save his as a memorable keepsake.

So the M-1 Carbine went through several kinds of sights.
The Flip sight:

That old Winchester is worth a number of dimes retail right now definitely worth holding on to.
 
The sights are after market. The rifle probably came with type 2 or type 3 sights. I think I see a W stamped on the barrel and the finish looks original. I'd like to see what the manufacture codes are on the other parts. This rifle might be an easy restoration. It's also a later serial number.
 
I am not an M1 Carbine historian, but before I would modify that gun I would do some checking to make sure it’s not some rare iteration of the M1 Carbine that’s very collectible.l or a military curio.
Perhaps call the CMP and ask them?
 
It’s already historical and valuable. It was grandfather’s! And he had great taste!:)

I have no idea why taking custom sights off of a custom rifle, and replacing them with surplus grunge, would increase the value.

To what? The same as every other one?

A neat One-Of that I wouldn’t waste the time making the same as all the others.

Just my take on it.

My grandfather was a tank mechanic. The only thing I found from his time in Germany was a carbine heat shield, and one 30 Carbine brass case in the flower bed out back.
The carbine was sold for the 760 of his I have, but I would cherish either equally.

I have thought about those sights for years. I don't want to destroy something my grandpa did. Money can't replace memories.
If you wanted to replace the sights you can do that and still go back to what Gpa did. The front should be pinned in place and slide off the end of the barrel and the rear slides into the dovetail
 
I have seen a number of Garand peeps cut open to form a notch sight like that.

People don't all understand that a close notch - or a distant aperture - is not as effective as the usual placement.
"But Granpa allus shot with a crotch sight an I'm gonna, too."
