Depends on how you're hunting. Over a tank or mojo, you'll likely want I/C. Open grain fields, probably modified. You need to pattern the chokes, though, to make sure they throw uniform patterns.
Depends on where most of your shooting will take place.
They roost in woodlines and taking them as they come out of the trees is fairly short range work so I.C. choke is very good.
Shooting over sunflowers as they come in to feed is a longer range proposition and the modified choke is best for this.
If you are shooting where steel shot is a requirement and don't have specific steel shot tubes, the improved cylinder tube will provide the best patterns for both shooting scenarios.
Personally, I find the 12 a little TOO much gun for the game, preferring a 20 or even a 28; but as mentioned, choose your loads and hit the pattern plate to see what will work best for you where you hunt
I use cylinder bore in other words no choke with heavy loads of #8 shot works for me I don't take long shots I catch em in closer, that way I don't have to walk so far!
Dove season is when my variable choke 20 ga shines. It's not pretty out on the end of the barrel but it lets me fine-tune to how in shooting and where the birds are flying. I tend to shoot full choke though so that there's less chance of an injured bird running away. I prefer birds hit the ground dead.
