My family has always butchered our own deer, if for no other reason than quality control. Two of the guys I hunt with are guys who service butchering equipment, and they have all the machines, down to the shrink wrapping machine, right at camp. I have a grinder attachment for my Kitchenaid stand mixer, and it works fine in small batches.
As for the rabbit hunting, We'll definitely have to hook up on that. Shotguns or .22's? All I've got for a scattergun is a 12 Gauge right now. I bet I could borrow a .410 for the day though.
