Bumped into these at Wal-Mart. I needed some inexpensive kitchen knives for a family member who does not take care of more expensive knives.

I got a set of the "chef" knives for about ten bucks. Here's the advertising blurb:

Tempered and hardened high carbon steel with taper ground edge is designed for perfect cutting performance. A full tang runs the entire length of the handle, offering exceptional control and ensuring precision cutting. Sustainable, eco-friendly acacia wood handles are triple riveted for durability.

I did not find that they were as sharp as I wanted out of the box, but a quick pass with a ceramic rod fixed that. The blade is fairly thin and appears to be some sort of stainless. The wood handles feel good to me.

At ten bucks for the 2-piece santoku knife set, I find these to be a pretty good deal for gifts or utility use.
 
I got her steak knives at Walmart. They are without blade serrations. I resharpened and they are the sharoest I have ever made a knife, however the blade dulls quickly. A steel helps prolong this.

I resharpen using a Razor Edge Paper Wheel on my bench grinder. Great system.
