I got to go Quail hunting the other day for the first time with dogs. What a blast. I now have a mess of quail I need to cook.

Anybody got and good recipes???

Don't, but

there were a few in the NYT a few weeks ago, including some delicious sounding Asian ideas.

back when I used to shoot a lot of quail my favorite recipe was plucked (or skinned) quail brasied in wine, butter, and a splash of cranberry juice. Serve over angle hair pasta.

Cover with bacon, throw some butter and maybe a little lemon pepper. Bake til done.

Last night I I mixed up some buttermilk, flour, sage, pepper, lemon pepper and butter in a ziplock bag, threw quail in there shook it up real good, took out and fried under a big heavy piece of wood for awhile.
 
bread 'em and deep fry 'em, then coat with buffalo wing sauce. my dad and i did a couple dozen quail like that for a superbowl party once.

or breaded and fried with cream gravy.

or buried in a pan of stuffing, topped with cream gravy.

if you are going to grill them, wrap em up in a bacon jacket, they grill fast and dry out easily.

boil a few, add carrots and celery and noodles for a tasty soup on a cold day.

we were always trying to find new ways to prepare it. quail was a staple in my house during the season.
 
Here are some of my favorites:

de-bone the breasts.

marinate for 2 hours in balsamic viniagrette salad dressing.

lay one breast flat, lay half of a big jalepeno or poblano pepper on top, cover with other breast.

double wrap in bacon and put bamboo skewer through to hold it all together.

(you can add sliced water chestnuts too if you like them)

grill.

eat.

Combine 3 tbs. ground white pepper, 3 tbs. coarsely ground black pepper, and 3 tbs. kosher salt in a bowl.

brush quail with olive oil on both sides.

season with the pepper/salt combo.

Grill.

Skin them, wrap them in bacon, and bake. Serve with cooked apples, wild rice with mushrooms, mashed potatoes, and wine. Asparagus is good, too.

Do not age them. Small birds should be field dressed as soon as possible after they are shot, and the sooner you cook them, the better they will taste.
 
Man, I'm gettin hungry. Where in the hell did you find a mess of quail? They sure are few and far between here.
 
Out here in CA, I drive up in the mountains and can hunt valley quail and whenst real lucky, I'll jump some mountain quail, which are huge. I generally hunt quail 2-3 times per month during season and usually (not every time) limit out (10 birds). Some of the people I take with me sometinmes give me their birds. I vacuum pack them and eat them all year round.

Quail is my favorite upland game bird.
 
It was what I believe they call a canned hunt. The farm raises the quail and will set the out in the field. You pay to hunt them. It is still a hunt and if you don't have a bird dog you will not find any birds. Three of us hunted 150 acres for 5 hours using 3 dogs to get 27 quail.
 
Quail running around here like ants. I have 12 Gamble's Quail feeding in my back yard as I type. They love the bird seed the wifey puts out.

Last time we went out hunting quail (2 weeks ago) we ran into a group of 30 birds. Between the two of us we took 6 each. :D
