I just picked up a MKII Stainless Bull Barrel 5.5inch, with the stock black checkered grips. I’m looking at replacement grips, but I was wondering if post-'71 MKI or any MKIII grips will fit the MKII. (After reading the sticky, it seems that grips for the Standard and pre-71 MKI would not fit)

For example, I’ve seen grips listed for the (post-’71) MKI – would these fit a MKII?

I don't think the grips for a MkI (any MkI) will fit a MkII, due to the bolt-stop on the MkII.

I'm not certain, but I thought the MkIII grips will fit on a MkII, albeit with bits missing because of the MkIII's mag-release button being by the trigger guard, whereas the MkII's mag-release is in the heel.

I've only got a Mk.II (soon to be two Mk.IIs), so I can't verify this...

You can fit a hogue MKII grip in a MKIII with minor trimming of the rubber to fit the mag release button. A MKII wood grip will fit in a MKIII unless you cut a round groove to fit the mag release button.
