Sharpening a brittle blade

My dad gave me a beautiful handmade knife from an Indian reservation in Canada. the sheath is handmade, and the handle is polished antler. I was going to use it this year for a dressing blade, but I can't get the blade very sharp. I made a few hundred strokes using a V sharpening system, but I don't make a lot of difference. I then noticed that the upward curve of the blade is chipped, and once in a while I find tiny pieces of metal on the sharpening stand. I am using a fairly narrow V to sharpen the knife with. Do I need to put this knife on display and enjoy it or can I get it sharp enough for dressing deer?
