I've recently acquired a new Taurus 1911 -- I have a set of Pachmayr ALS grips coming in the mail that will replace the factory plastic ones.
I was thinking about taking the factory grips and painting them with some left over 383 green (CARC camo green on military vehicles) from my M35A2. I'd use a self-etching primer and a light coat of a non-gloss sealer. Something like these (except won't cost anything out-of-pocket vs. $60):
