Polished Stainless Hi-Shine Mirror if possible. I love the look. Other wise satin stainless is next choice. Stainless looks great year after year. Cleans up nicely. I had a stainless Series 80 Gold Cup that was polished by a local gunsmith. It looked like jewelry.
 
I like the parkerized finish the best, but stainless or hard chrome looks very nice as well.

nothing like a well used parked unit or a little faded blue, of course there stainless steel, and black coat, and on and on and on, guess it depends on the mood i'm in that day.

If you have ever seen the luster of a true hot blue job on a 1911, you'll never forget it.

After that, polymer coat over phosphate if it is a carry gun.
 
I am partial to the GI-style parkerized. Very traditional.

But I think going hard chrome is pretty cool too.....especially with some nice aftermarket grips. Less traditional.
 
Gorgeous deep blue on an original Colt 1911 that someone's grandad left them, maybe just a touch of edge wear.

It depends on the what M1911 you're talking about. A military issue M1911A1, then I would say parkerized. A Colt Series 70 Government, I would opt for bright nickel. A race gun for competition, would look good with a bi-tone finish with a blued slide and a hard chromed frame.
 
i like to see 1911's finished in rust ;P

I've got some pics of that... then again I also have pics of it shooting 3" groups at 25 yds off hand.
 
I've always really liked what Para does with the black gun and stainless controls.

For looks, I don't think you can beat a deep polished blue. For carry I prefer something a little more wear friendly though.
 
i am a huge fan of black, i like the armory kote from springfield, i also like a good ole fashioned park and that is good for me.

it is hard to beat an old fashioned blued gun though!
