For carry at some point there is a trade off on concealment versus control. As someone else pointed out an officer's frame gun or a bobbed Commander are about equal in concealment. A bobbed officer's is really only sacrificing control for concealment, without really offering much more in concealment.
As for why you won't enjoy shooting it, I guess maybe you might, but I already find shooting an Officer's model more challenging than a full size gun, because of the abbreviated grip, factor in even less grip and add in a full power round and you're not talking about a package that will be first on your list to grab up and run to the range with.
I think as someone suggested an aggressive rounding of the MSH on an officer's frame will probably (at least I think) offer almost the same in concealment as bobbing, but not sacrifice your control factor.
