Venison Tacos

First take 1-2lb venison and cube it. Then I put it in a bowl and marinade with equal parts of worchestershire and soy(or teryaki). I'm gonna guess about 1/2 to 2/3 cup each, just enough so that I can start to see it in the bottom of the bowl. Then I add:
1/4 cup olive oil
Juice of 1 lime or lemon (a little vinegar will work also)

Healthy amount of these spices:
cumin
cayanne pepper
black pepper
garlic powder
paprika

Then I mix thouroughly in the bowl until evenly coated, and it goes into the fridge. I let it sit for AT LEAST an hour, stirring occaisionally. It pretty much takes at least an hour for the marinade to take to the meat. After it marinates, I drain the excess marinade and cook it in a skillet. Meanwhile, I take corn tortillas and dip them in hot oil for around ten seconds to make them soft. Then serve with fresh cilantro, green onions, grated cheese, limes, and salsa. Guacamole and sour cream are good too. Everybody loves these, y'all should try 'em.
 
I've done this one a couple times. I've never been a big fan of duck, but this one is actually pretty good:

Duck with Apple Dressing

6 duck breasts filleted
1 cup water
1/4 cup butter
1 cup apple juice
1/8 teaspoon cinnamon

Place duck breast in skillet. Add water and butter. Cover and simmer 20 minutes until tender. Remove lid and continue cooking until water evaporates. Add apple juice and cinnamon. Simmer an additional 15 minutes. Remove duck and set aside while preparing dressing. Thicken apple juice with cornstarch (I used a little flour instead) and set aside to serve over dressing.

Apple Dressing:

1 box Jiffy corn bread mix
2 cups apples, peeled and chopped
1/2 cup onion, chopped
1/2 cup celery, chopped
1/2 teaspoon poultry seasoning
1 egg
1/4 cup butter
1 10 3/4 ounce can cream of chicken soup
1 cup milk

Bake cornbread as directed on package. Set aside. In a saucepan, in a small amount of water, cook apples, onion and celery till tender. Drain. In a large bowl, mix together the cooked apples, poultry seasoning, egg, butter, soup, milk and the cooked cornbread. Place half of the dressing in a small casserole dish. Add duck breasts. Cover them with remaining dressing. Bake at 375F for 45 minutes.
 
Just tried a new one. Marinate a whole backstrap or a half depending on how many people are eating, in soy sauce, olive oil, and minced garlic for 4-5 hours. Season with salt and pepper to taste and grill on low heat until medium. Let it rest and then slice it about half an inch thick. Man it's good. The leftovers make awesome steak and biscuits for breakfast the next morning too.
 
deer chili and for the wild turkey, i slice the breast into tender strips, roll em in flour, then dip in milk, then roll em in breading and fry em in vegtable oil. now thats a meal.
