Well to answer your original question. The knife with the higher carbon steel blade. It should hold a edge longer than that of the lower carbon. High carbon steel will also take a new edge with less effort.

On a side note I understand that you are not trying to save the hide. That is fine and it is not a concern to put a few holes in it. What is a HUGE concern is getting hair on your meat. I don't care if you are after jerky instead of steaks. Hair will flat ruin that deer meat in a hurry. doesn't matter if you use a 6" knife or a 2" knife care is needed when removing the hide.

I like to use a Dodge truck to skin deer, but am extremely interested in using an air compressor this year. Will the air compressor work on field dressed deer?
As to best knife for skining, pick one with a swept blade. i have a world famous Green River knife form Herters which really does a good job when the pick-up is not handy.
 
I skin with a Mad Dog Lab Rat (4x 1/8" blade) and a Mad Dog BearCat (3/16th x 5.5" blade). I did lots of Goats and sheep and pigs with this combo the last 5 years. I did a few deer , elk and antelope too.
I used to use a real Bob Loveless Drop point Skinner of about 4 1/2" along with a Wyoming Hunter exchangeable scapel device for 20 year prior to that.

Doing X number of sheep, pigs or cows in a hour is a lot different then doing one deer a year but if you look at the processing kits that Outdoor Sports etc. advertise they all have one of those blades in them but also a boning blade, a butcher blades, a cleaver etc.

The ultimate skinning blade is the Inuit "Ulu" knife as was mentioned and can be bought from a number of different sources...This is like mine but mine doesn't have the scrimshaw
