Use would be for daily concealed carry in a Crossbreed IWB. Dress would range from jeans and untucked shirt to slacks and tucked shirt with jacket.

3" barrel, alloy Officers frame, 26.5 ounces, standard sights, 7+1 .45ACP capacity

I've found that with 1911s and the Crossbreeds, it's a lot less about the overall length of the firearm, and moreso the width. (my G27 and HK USP don't conceal as well as my 4.25" Commander size Dan Wesson)

I would take door #2 and wouldn't even think twice. Night sights, bobtail, better length barrel etc. Also, the extra ~3oz will be spread across many inches with the Crossbreed, so it's effect is negligible.

FYI...if this is your first Crossbreed, I don't recommend going for the horsehide option as it takes longer to break in and isn't quite as comfortable. I would also strongly recommend the combat cut...it's a lot easier to get a handle on the butt of your pistol.

Not the first. I carry my G36 in one and can't say enough good things about it. The combat cut is one thing I don't have on mine that I think I'd get on a new 1911 IWB.
