I recently acquired a Winchester 94 in 30-30. It has a WIlliams peep sight installed, and the standard rear sight has been removed. Because of this, there is a empty dovetail on the barrel from where the rear sight was before. I understand there are "blocks" that can be placed in this dovetail to fill it and improve the appearance. Where would I get one of these things?

It’s called a “dovetail blank”.
MidwayUSA and Brownells carry them.

Another alternative is to install a folding leaf rear sight such as what Ruger supplies on the 10/22, or one like Marlin put on their rifles circa 1960-2010.

You can find them listed as
_ dovetail blank
_ dovetail sight blank
_ rifle dovetail blank
_ dovetail slot blank

and you can find them shaped to blend in with the barrel or even decorative styles.

When I installed a receiver sight on my Marlin 336, I redid the original open sight as a dovetail blank.
Some people aren't bothered by an empty sight dovetail slot on the barrel, but some of us are.

A folding open sight would be an option (a bit more expensive than a dovetail blank) and a backup in case the receiver sight is no longer wanted.

[From the time I was a kid, I thought a Winchester 94 carbine with a Williams receiver sight was THE All-American Deer Rifle.]
