I've been considering removing the stocks from my rifles and treating the wood with a good oil compound, since the insides have no finish on them to repel the oil.

Is there any reason why not to do this?

No reason at all not to do it. There are several choices. The classic is Johnson's paste wax -- rub it in good. Others include spar varnish, or bedding compound -- but in that case, you need to relieve the wood a bit to keep the barrel free-floating.
