Ruger makes the Mini-30 (7.62x39) and a Mini in 300 BLK. They also used to make a 6.8 SPC Mini.
Some guy also made a .450 Bushmaster Mini, but it was a custom job and I don't think he made any more.
Anything in the 6mm to 7mm family. For my purposes (mostly plinking and busting pop cans) they don't do anything a .223, .308 or .30-06 doesn't at a lower price point.

I'd probably pick a Mini 14, a PTR91/FAL/Other-.308-battle-rifle, a Ruger 9mm carbine, and a Super Redhawk .454 Casull revolver.
