If you are hunting some where that if the bullet didn't take the deer straight down & the tracking could be hard because of thick stuff then use a tough bullet because if he don't drop he will bleed big time & track real easy . on the other hand if the country is open shoot a fast expanding bullet & he will not run far if at all. This is how I choose bullets for inexperienced hunters I tend to.
 
If you're going out to 300+ yds, shoot whatever's accurate in your rifle. As mentioned above, anything will kill a whitetail. Don't use Matchkings or similar target bullets...
