whatcha got? shot my first geese last night!!! thinking of cutting them up and smoking them esp breast looks like good jerky but im open to pretty much any recipe.
 
butterfly um, soak them in Oj for 24 hours, then grill slowly to medium. Put them on a sandwich with somey honey mustard :)
 
I soak 'em in buttermilk overnight. Also, wrapping them with bacon helps give 'em a better flavor, takes some of the wild out. I just breast my birds, most of the meat being on the breast.

A goose is not necessarily a goose, either. Snows are a little stronger than Canadas and specks. All good grilled, though, if not over-cooked and if marinated and bacon wrapped, especially. :D
 
1. Seal the goose in a large zip-lock bag.
2. Cover with a quart of Black Jack Danial's whiskey in a Tupperware container.
3. Let set refrigerated until Saturday night.
4. Throw the goose away and drink the gravy with Coke & ice.

I like to smoke the whole bird, hickory or maple give me the best results, then freeze them. For ducks my recipie is to throw them in a roaster, and bake them with no spice, maybe a little water to keep them from drying out, then cut them up into chunks and freeze them so they can be feed to the dog as treats all year long as he enjoys them much better than I do.
 
I gave up goose hunting soon after I tried to eat a few of 'em.:barf: I raised domestic goose and love it.......but wild goose is just plain nasty.

Now with unlimited fall turkey permits available, there's somethin' much more tasty to hunt.
 
take the goose meat and slice it into strips about 1in thick how ever long then get a large bowl and put 3cups soy sauce, 8oz liquid smoke 1teaspoon garlic powder, 1.5 teaspoon onion powder and salt and a teaspoon of worchestershire. soak the goose meat over night and smoke for 6-8 hours with hickory chips.( my dad and i get about 40-50 geese every year so we save it all and do this)
