I know that sometimes the cartridge stop and cartridge interrupter bars can slip out of place when reassembling and cause the action to bind up. I've had it happen a couple of times on me. Most of the time when those two bars slip out of place, it makes getting the trigger housing very hard to get in the right position for the pins.

Well they are in place I’m able to the the trigger housing inside and locked in but I feel when racked back it’s pushing on the trigger and that’s when it jams

Did you check to see if those bars and the cartridge lifter did not somehow get tweaked?

My suggestions are based off my personal experiences when reassembling a 500. I have owned several Model 500s over the years and have always had one since 1985. I have had the same problem as you described and it was the bars were slightly out of place or the lifter was. Things happen even when you have done something repeatedly.
