I would stock up on a couple thousand rounds of practice ammo and 150rounds of SD ammo.(I don't have a place I feel comfortable reloading.)
That would leave me with about $520. I would probably look for a CZ 75 Compact PCR, CZ 2075 Rami Polymer, or order a Walther P99c from CDNN. That should use it all up.
I'd say, to put some borders on the thread: you've got a $1000 must-be-spent gift certificate for some mega online place like Buds or GB and no change will be given.
As for me, that should just be enough to cover an FN-SLP 12 gauge semi-auto shotgun. Or a nicely tricked-out Remington 1100. Or, a relaitvley high-end .45 semi-automatic.
Given we don't know what rifles you own, what kind you like, etc. I'm not sure how useful our answers could be. But for me personally, based on what i already have, i'd get either an HK P30, Arsenal .223 AK, or a VZ 58. I've been thinking about a DS Arms FAL or PTR as well but really i'm more interested in a .45 can right now.
A .458 SOCOM Upper for my AR and some ammo. Or a .45-70 lever action and a Winchester 1887 shotgun (because I've always wanted one). There's a lot of gun stuff I could buy with $1000...
I would get a new SSD hard drive, so that I could get onto my computer faster to do firearms research, which will essentially get me ordering products faster and get me off the computer and onto the range faster. Okay, I loosely managed to tie that one into firearms
Strictly firearms-related, I would finish some projects I haven't finished yet. Get an aimpoint for my shotgun (to replace the cheapo RDS that broke after 8 shots), amongst other things.
