Apparently most German scopes were not adjustable for windage. That was done at the depot level when the scopes were installed on the guns.

How well sealed were they? That is, were they nitrogen filled?
 
No, Marcus Leupold invented nitrogen purging and sealing of scopes in 1947. They were probably sealed, but with room air, which can condense and fog the scope.
