OK, I know the buffer, bolt, bolt carrier, charging handles are different.

1) Would an AR-15 receiver end plate work on an AR-10?

2) How about an ambidextrous safety?

3) Norgon ambdiextrous magazine release?

4) Are barrel extensions compatible?

5) How about ejection port covers?

What other things should I be aware of?

Fire control parts, receiver extensions & stocks, grips, some hand guards and gas blocks/FSB are compatible. Everything else is platform specific, and no standardization of .308-AR platform means that you need to do your homework if building a frankengun.

While we're at it, on the Armalite AR10, can you utilize AR15 handguards/barrel nuts?

No on the barrel nut, and it depends on the hand guard. Reason being is that the gas tube sits higher on an AR-10 than an AR-15. I used an AR-15 drop-in quad rail on the AR-10 I had, and it fit, but had to be clearanced for the gas tube.
