What really matters most is which YOU prefer. And if you don't know, it might be to your advantage to find out before you buy. You can't really go by what other people say -- as unless they've got both, they tend to push their own choice.
If you can find someone locally with a broken-in CZ-75B and someone else with an omega-equipped 75B (or a P-07 or P-09), you can make your mind up for yourself. Some ranges have rental guns, and if you're lucky, you can find one with CZs. You might post where you live, generally, and someon in that area participating here might let you try one of their guns.
The potential for the trigger "being improved" on a standard CZ is a potential that few ever take advantage of. Probably 1 or 2 in every 10 CZ owners go to the trouble of tuning their CZ triggers, Mot find that after about 300-400 rounds, the trigger is pretty good. Unless you plan to spend the extra money to have it done, don't worry about that "potential."
I have had a bunch of CZs. I still have a superb CZ-85 Combat (which, internally, is almost identical to the standard CZ -- the only difference is that it doesn't have a firing pin block. I also have a CZ-75 P-07, bought used, which has the Omega trigger system, with the safety installed. It is a very good trigger. I was suprised by just own good the P-07 is! The Omega system apparently doesn't take as much (if any) breaking in like the standard trigger. Once they're broken , but still stock, I doubt you'd notice much difference.
